Balsamic Blueberry Grilled Cheese Sandwich

i’ve been on a bit of a gourmet grilled cheese kick lately; we’ll blame it on the drizzly, cloudy, generally blah winter weather we’ve been having around here…..this may be the first of several “grilled cheese” recipes

now i’m not gonna kid you, while i thought this was close your eyes and relish each bite delish, the short people around here wouldn’t touch it – until i made them each try one bite- and then there was “yucking” and spitting going on.
maybe you need to be over 20 to appreciate the finer things of life?
in the meantime, we’ll stick with boring grilled cheese for the young ones.

Balsamic Blueberry Grilled Cheese Sandwich

Ingredients
  • 4 slices of bread (I used homemade sourdough, a subject for another post)
  • thin slices Havarti cheese (could sub in a different white cheese)
  • fresh spinach or kale
  • ½ cup blueberries - fresh or frozen
  • 1 Tablespoon raspberry infused balsamic vinegar (regular balsamic would be fine)
  • 1½ Tablespoons brown sugar
  • fresh ground pepper
  • butter
Instructions
  1. In a small saucepan, combine blueberries, sugar and vinegar. Place over medium heat and simmer for 10-15 minutes,smashing the berries as you stir; set aside.
  2. Heat skillet or griddle to medium heat. Butter 4 slices of bread and place 2 of the slices (butter side down) on griddle. Top with cheese, some spinach, fresh ground pepper and drizzle with blueberry sauce. Top with remaining slices of bread and toast until bread is golden and cheese is melty.
