Pineapple Whips

Ingredients
  • 3¼ cups pineapple juice
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 1½ cups heavy whipping cream
Instructions
  1. Heat 1 cup of pineapple juice and sugar to a boil. Remove from heat. Add remaining pineapple juice and vanilla; chill.
  2. When pineapple mixture has cooled, add cream and pour into prepared ice cream maker canister; (I have a 2 qt. electric Cuisinart ice cream maker) freeze according to directions. When the ice cream is done, you can serve it right up, eat it right up, or put it in the freezer for latter – it does get considerably thicker if you freeze at least 2 hours before serving.
