peanut butter chocolate waffles with bananas and honeyed yogurt

Ingredients
  • For the waffles:
  • ½ cup (1¾ oz.) spelt flour*
  • ½ cup (2 oz.) white whole wheat flour*
  • 2 tbsp. baking powder
  • ¾ tsp. kosher salt
  • ½ cup creamy peanut butter
  • ½ cup sugar
  • 4 tbsp. (2 oz.) unsalted butter, melted
  • 2 large eggs
  • 1 cup (8 oz.) milk
  • ½ cup (3 oz.) dark chocolate chips
  • For topping:
  • 2 cups plain yogurt (can use homemade, greek....your choice)
  • 1 Tbs. honey
  • ⅛ tsp. ground cinnamon
  • Sliced bananas
  • Turbinado sugar, for sprinkling if you want to get fancy ;)
Instructions
  1. To make the batter, combine the flours, baking powder and salt in a small bowl. Stir to mix, then set aside. In a medium bowl, combine the peanut butter and sugar and mix briskly with a spatula until the peanut butter softens. Whisk in the melted butter. Whisk in the eggs one at a time, mixing just until smooth. Add in the milk gradually. Whisk in the flour just until evenly incorporated. Fold in the chocolate chips. Let the batter sit for at least 10 minutes before you use it, allowing the whole grains to absorb the liquid.
  2. Cook the waffles in a waffle maker according to the manufacturer’s instructions. Yield will vary depending on size/shape of waffle maker.
  3. In a small bowl, combine the greek yogurt, honey and cinnamon. Stir together to blend well. Taste and adjust as necessary. Top each waffle with a dollop of the yogurt, sliced bananas and a sprinkling of turbinado sugar.

  5. You can buy these flours, but if it's possible for you, freshly ground from the berries is so much better
