Family Favorite – Cookies and Cream Rolls

One word – amazing.  This dough is just incredible, and you can totally switch up the filling.  I’d recommend doubling the recipe, while you’re at it, and also using buttermilk ( I upped this to 1/4 cup and added additional powdered sugar ) in the icing.

This week, we had the same rolls, but I used a gingerbread filling.  This was Clint’s favorite, but the kids still preferred the oreo.

Gingerbread Filling

Ingredients
  • ¾ cup cookie butter ( we used Biscoff )
  • 2 Tablespoons butter - softened
  • ½ cup firmly packed brown sugar
  • 1 teaspoon cinnamon
  • ¾ teaspoon ginger
  • ¼ teaspoon allspice
  • ¼ teaspoon ground cloves
  • ⅛ teaspoon nutmeg
Instructions
  1. Mix well and spread on sweet bread dough. Roll up cinnamon roll style.

 

Amy’s Favorite – Apple Sausage Breakfast Bake

I love making a pan of something healthy at the beginning of the week, and then re-heating a slice for my breakfast the rest of the week.  This recipe sounds a little odd, but I love the flavor, and also the protein-veggie-fruit profile.

Ingredients
  • 4 teaspoons avocado oil
  • 2 medium, tart apples chopped into ½" pieces ( I used Granny Smith )
  • 2 zucchini, chopped or shredded
  • ½ teaspoon cinnamon
  • 1 Tablespoon maple syrup
  • 1 cup diced onion
  • 1 pound ground sausage, fried and crumbled ( I prefer turkey sausage )
  • 1½ teaspoons salt, divided
  • ¼ teaspoon pepper
  • 4 large eggs
  • ½ cup milk
  • 1 cup blanched almond flour
  • ½ teaspoon baking soda
  • ½ teaspoon vanilla extract
Instructions
  1. Preheat oven to 375 degrees. Line a baking sheet with parchment paper, and grease a 9x13" pan with oil.
  2. Place zucchini in a colander and sprinkle with ½ teaspoon of salt to draw out moisture. Let rest.
  3. In a large mixing bowl, toss together apples, onion, 1 teaspoon oil, cinnamon and maple syrup. Spread evenly on baking sheet. Roast for 20 minutes, add zucchini, roast an additional 10 minutes, then allow to cool for at least 5 minutes.
  4. In a mixing bowl, combine eggs, milk, almond flour, baking soda, vanilla and remaining salt. Whist to thoroughly incorporate. Add cooled apple mixture and sausage; stir well.
  5. Pour into prepared pan and bake for 35-45 minutes, until golden brown and puffy around the edges. Allow to cool slightly, then slice and enjoy.
  6. *I sometimes add a jalapeno, 'cause i like things spice
