it was hot.
i had a craving for one of my favorite summer treats – pineapple whip ice cream.
i couldn’t find my recipe – anywhere.
after some deep searching and digging, (plus emailing my sisters to see if they had a copy) i finally found the recipe and quickly made a batch. but first i made sure i saved the recipe, because i’m telling you, this is just so lip smacking’ good.
if you feel really ambitions, these would look more impressive with homemade waffle cones. i may try that one of these days, but for now my family’s very content with a box of sugar cones.
Pineapple Whips

Serves: 2 quarts
fresh, easy, refreshing.
Ingredients
- 3¼ cups pineapple juice
- 1 cup sugar
- 1 teaspoon vanilla
- 1½ cups heavy whipping cream
Instructions
- Heat 1 cup of pineapple juice and sugar to a boil. Remove from heat. Add remaining pineapple juice and vanilla; chill.
- When pineapple mixture has cooled, add cream and pour into prepared ice cream maker canister; (I have a 2 qt. electric Cuisinart ice cream maker) freeze according to directions. When the ice cream is done, you can serve it right up, eat it right up, or put it in the freezer for latter – it does get considerably thicker if you freeze at least 2 hours before serving.
